Did you know that that prominent truffle smell is actually a release chemical scents similar to pheromones produced by mammals? But with a combination of strong smell and flavour, a little goes a long way!

So that's why we've incorporated it into this starter - our Pink Heirloom Tomato Salad with Truffle Burrata ❤️ Call it a lovers twist on the Caprese!

Ingredients:
4 heirloom tomatoes in shades of pink
1 truffle burrata ball (@Eataly makes a fabulous one in house!)
Fresh basil
Fresh mint
Extra virgin olive oil
Salt & pepper
1/4 cup crushed unsalted pistachios

How-To:
1. Slice your tomatoes into about 1cm thick rounds. Arrange on desired board of serving plate.
2. Add your burrata. For this recipe we like to tear pieces and lay them evenly on top of the tomatoes.
3. Add your leaves of basil, mint, and crushed pistachios. Drizzle with olive oil.
4. Sprinkle with salt and fresh cracked pepper!

If you instead would like to plate as individual salads, simply repeat the above steps onto separate plates.

Peak perfect heirloom tomatoes with creamy burrata cheese is one of the best food combinations in existence - and the truffle flavour only amplifies everything!

Oysters & Rosé Mignonette Sauce

Time for the ultimate VDay appetizer! Oysters & Rosé Mignonette Sauce 🌹

Oysters are one of those foods most people have very strong feelings one way or the other - kind of like cilantro. You either love them or you hate them!
We are definitely the latter, and given that the oyster has long been considered an aphrodisiac, we of course had to add them to our Valentine's Day menu.

To make them even more theme friendly, we put a spin on the classic (and simple) mignonette sauce, by simply adding Rosé! This really gives it a wonderful flavour, and enhances those pink hues!

Rosé Mignonette:
1/2 cup rosé of choice (dry or sweet, or lighter vs darker pink!)
2 shallots, minced
1 tablespoon white wine vinegar
1/4 teaspoon freshly ground pepper
1/8 teaspoon sugar
1/8 teaspoon salt

Now all you need are the oysters! Our go to spot for seafood in the city is Diana’s Seafood , they always have the freshest selection and the staff are super knowledgable!

This month we'll show you how to host a "Soulmate Soirée" ❤️

First, as always, decor! While grabbing all the pinks and reds you've got is a good start, here's an idea we absolutely love - DIY XO table runner! It's a more subtle nod to the theme - while being a combination of neutral tones.

Us personally, we love the warmth that the kraft paper brings to the tablescape - but go for whichever you like best!

And best of all - totally recyclable when the evening is over!

All you need is:

A roll of paper (Amazon or Michaels has many options)
Paint in desired colour
Paint brush

Then it's just a matter of painting and letting dry!

Roasted Artichokes with Herb Garlic Butter

Today we're taking on a pretty intimidating ingredient - the artichoke! Like so many other people, trimming and prepping artichokes used to put us off them - until we found this method!

Roasted Artichokes with Herb Garlic Butter is the BEST way to cook artichokes! Forget about boiling or steaming, roasting preserves their wonderful, delicate flavour! To make her artichoke “experience” as easy as possible, I made these beautifully trimmed and amazingly aromatic Roasted Artichokes with Garlic Butter that I roasted with lemon slices, garlic and herb sprigs. The other wonderful thing about preparing artichokes this way is that your guests don’t have to deal with the fuzzy choke either.

Ingredients (for 4 servings):
2 large globe artichokes
4 large lemons - 2 juiced, 1 sliced to yield 4 slices, 1 to slice into wedges and serve
Extra-virgin olive oil
salt and freshly ground black pepper
12 whole garlic cloves
4 sprigs fresh thyme
4 sprigs fresh rosemary
1 stick salted butter very soft

How-To:
1. Preheat oven to 400 degrees. Fill a bowl (large enough to hold the artichokes when halved with water). Add the lemon juice and lemon pieces.
2. Using a sharp knife and or kitchen sheers. Trim any dry stem end from the bottom of the artichoke. Remove tough outer leaves from the bottom of the artichoke. Trim approximately 1 inch from the top of each artichoke.Trim the tips of each leaf. (Be careful! They can have sharp barbs.)
3. Cut the artichoke in half from top to bottom. Scoop the fuzzy choke from the centre of each artichoke. Immerse trimmed halves in bowl with lemon water, let soak for 15 minutes.
4. Drizzle a large roasting pan with olive oil. Season artichokes with salt and pepper. Place 3 cloves of garlic in each artichoke, top each with a sprig of thyme, rosemary, and lemon. Carefully flip the artichoke half over so that the cut side is facing down - Making sure the garlic and herbs are securely inside. Drizzle tops with olive oil.
5. Cover with foil. Roast for 45 to 50 minutes or until tender. (Test doneness by gently pulling on one of the leaves or test with a small, sharp knife.)
6. Place butter in a small saucepan. Remove the garlic cloves and herbs from the pan and add to the butter. Mash it into the butter, then gently melt the butter. Serve the artichokes with the butter and lemon wedges.

You'll definitely want to save this one down, you'll never cook artichokes the same way again!

DIY Sparkling Evergreens

A Winter Wonderland tablescape wouldn't quite be complete without a 'snowy' forest scene!

And while decor is really the best way to transport guests into the theme, we wouldn't expect yoou to purchase new decor elements for a single night, that's where a cheap and cheerful DIY project comes in handy!

These Sparkling Evergreens are a genius way to incorporate that Winter Wonderland feel without spending much time or money on the project!

All you need is:
Thick paper - bristol board is ideal
Glitter or choice (metallic paper is a great option if you can find it)
Hot glue gun
Mod podge or spray adhesive
Plate or bowl of desired size to measure/trace shape (bigger the circle, bigger the tree)
Newspaper or scrap paper (to cover the surface you work on)

How to:

1. Lay out your bristol board and begin tracing your circles. Divide the circles into quarters or thirds, depending on the shape you would like. The larger the pieces are, the wider the base of the tree will be.
2. Now that you have all your pieces, begin shaping the cones. Overlapping on the edges, and hot glueing together.
3. Working in sections, spread thin layer mod podge and sprinkle with glitter. Repeat until trees are complete!

And there you have it, the perfect centre piece for your frost bitten tablescape!

Classic French Onion Soup

You know we couldn't talk about warming foods without the mention of a nice hot bowl of soup!! And to no one's surprise, we're going French with it!

Classic French Onion Soup is deliciously rich, and only requires a small list of ingredients (lot's you likely already have around the house!). Like any good soup, it does take time, but the combination of flavours is worth the effort!
You'll definitely want to save this one down, it's the perfect snowy Sunday recipe!

Ingredients:
4 tablespoons (½ stick) unsalted butter
6 large onions (about 5 lb.), thinly sliced
2 large shallots, finely chopped
5 garlic cloves, finely chopped
½ cup dry white wine
1 tablespoon white wine vinegar
3 sprigs thyme
1 bay leaf
4 tbsp plain flour
8 cups low-sodium beef broth
8 slices ¼"-thick slices country-style French bread, toasted
8 ounces sliced Gruyère
Kosher salt and freshly ground black pepper to taste


Ideally you have eight 10–12 oz. ovenproof bowls, but if not, see step 5.

How-To:

1. Heat butter in a large heavy pot over medium-high heat. Add onions, shallots, and garlic; season with salt and pepper and cook, stirring occasionally, until softened and dark brown, 60–70 minutes.
2. Add wine and vinegar. Bring to a boil, reduce heat, and simmer until slightly reduced, about 3 minutes.
3. Tie thyme and bay leaf with kitchen twine; add to pot along with beef broth. Bring to a boil, reduce heat, and simmer, stirring occasionally, until reduced about 35–40 minutes; discard herb bundle.
4. Preheat oven to 450°. Place ovenproof bowls on a large rimmed baking sheet. Divide soup among bowls and top with toasts (cut to fit if necessary) and cheese. Bake until cheese is bubbling and golden brown, about 6–8 minutes.
5. (option without bowls in oven)
Since we still want that nice melted cheese & bread topper, simply lay your slices of toast out on a baking sheet, top with cheese and bake until golden brown. When serving up the soup, place once cheesy toast on top.

Serve immediately - this dish is always best piping hot!!

Chai Spiced Pear Bourbon Spritz

Happy Friday everyone!!

What better way to celebrate the end of the week than by introducing you to our cocktail of the month!

This is the Chai Spiced Pear Bourbon Spritz 🍐 The perfect combination of warming flavours with refreshing finish.

Ingredients (for 1):
1 1/2 ounces bourbon
1 1/2 ounces pear juice
1 ounce chai tea concentrate
1/4 ounce honey
1/2 ounce fresh lemon juice
Top with soda water
Garnish with sliced pear


Directions:
First, prep the chait tea. Boil your kettle, and ready a tea bag in a mug or cup of choice. Once water is boiling, pour about 1/4 cup over tea bag (this will yealed 2 ounces of concentrate). Let steep for at least 20 mins, so you get all those flavours infused into the water. This step can be done morning of, as we'd recommend popping the concentrate in the fridge so it has time to cool before mixing!
In a mixing tin or cocktail shaker, add ice, the bourbon, pear juice, chai concentrate, honey, and lemon juice. Give a good stir or shake.
Pour mixture into glass with ice, top with soda water, and garnish with pear slices!

What makes a great dinner party? Besides food, drinks, and friends, what are the easiest ways to set a dinner party atmosphere? Here are our top 5 tips for setting a cozy dinner party atmosphere; these are all really simple things — you may do them too without even thinking about them, but if not, it's definitely time to start!

1. Dim the lights: While we know many of you maybe don't have dimmers attached to each light, the main rule here is no harsh overhead lighting. If you're not able to dim, use the non-overhead lighting at your disposal - lamps!

2. Light Candles: This typically goes hand in hand with dimming the lights as candles are the easiest way to add that warm glow to any room! Not to mention, if you wanted to add a signature scent to the evening, a scented candles does the trick!

3. Music that matches the vibe: As anyone who has followed us for a little while will know - we're all about setting the tone with music. We find it to be the ultimate way to create the atmosphere you're trying to achieve. Whether you just want something mellow for the background, or something more fun for a cocktail party - putting the work in to find or create the perfect playlist always pays off. 4. Use real fabric/cloth instead of paper of plastic: Skip the paper plates, or disposable tableclothes, you want guests to feel welcome and at home. The only time we opt for the latter is if we're eating outdoors!

5. Amp up the coziness:During the cold winter months we love to turn up the heat a bit - literally! You'll always find a fire on in the living room, and we bring out a few blankets & shalls incase anyone is feeling particularly chilled. It's all about making sure guests are comfortable!!

DIY Bath Salt Party Favour

Baths are the best way to warm up and relax after a cold winter day - making homemade bathsalts the perfect Winter Wonderland party favour!

This DIY is one of the easiest, and totally customizable to your favourite scents!

In general, you'll mix:
3 cups of Epsom salt with about 1.5 cups of coarse sea salt and 1/2 cup baking soda, then add 15-20 drops of essentials oils of your choice and mix. To add a bit of colour and extra fragrance, you can also mix in dried rose petals, dried lavender, or even lemon zest!

To make the perfect party favours, simply pick up some small jars (enough for the amount of guests) and divide bath salts accordingly!

And remember to save some for yourself of course!! 🛀

Creamy Asiago Chicken Gnocchi Bake

Let us introduce your to our Creamy Asiago Chicken Gnocchi Bake 🤩

This casserole-style pasta bake is an easy comfort food dinner recipe for those chilled winter months.

Made with pillow-soft gnocchi, rosemary garlic marinated chicken and a rich asiago cream sauce, you (and your guests) will be licking your plate clean.

for chicken:
3–5 medium chicken breasts
1 tbs minced rosemary
3 garlic cloves, minced
2 tbs of olive oil
Juice from one lemon
Kosher salt and freshly ground black pepper, to taste
2 tbsp unsalted butter
3–4 cups baby spinach, roughly chopped

Sauce:
2 tablespoons unsalted butter
5 cloves garlic, minced
1 cup chicken broth, or more, as needed
1 tablespoon Italian seasoning
1/2 cup (125ml) half and half
1/2 cup freshly grated Asiago cheese
Kosher salt and freshly ground black pepper, to taste

500g Gnocchi

How-to:
1. Marinade Chicken: In a medium bowl mix together breasts with 1 tablespoon rosemary, 3 garlic cloves minced, olive oil, and lemon. Cover and let marinate for 30 minutes
2. Once the chicken is marinated, melt 2 tbsp butter in a large skillet over medium heat. Sprinkle chicken with salt and pepper and sear on both sides, until golden brown, about 2-3 minutes per side; drain and set aside.
3. Preheat the oven to 350 F. Move chicken breasts to one side of skillet. Stir in chopped spinach to the other side of the skillet and cook, stirring occasionally, until it begins to wilt, about 1-2 minutes. Set skillet aside.
4. Sauce: Melt butter in a pan over medium heat. Add minced garlic, and cook until fragrant, about 1-2 minutes. Gradually whisk in chicken broth and Italian seasoning. Cook, whisking constantly, about 1-2 minutes. Stir in half and half and grated Asiago cheese until slightly thickened. Adjust seasoning with salt and pepper, to taste. Reduce heat to low.
5. Cook Gnocchi as per your packet. Once cooked, add to pan with the sauce.
6. Add nnow sauced gnocchi to skillet containing your chicken. Top with a bit more cheese and baked for 10-15 mins.
7. Serve immediately!

While this one has a few more steps than the average pasta dish involved, we ccan guarantee the flavour is work it! The perfect winter warming recipe!!

White Chocolate Pavlova with Raspberry Compote

To kick off recipes this month, we're starting sweet!

Our White Chocolate Pavlova with Raspberry Compote are just as delicious as they are beautiful!

Pavlova (makes 9 mini):
4 large egg whites
tiny pinch of salt
1 1/4 cups superfine sugar
2 tsp cornstarch
1/2 tsp vanilla extract
1 tsp white wine vinegar
1 tsp lemon juice

White chocolate whipped cream:
4 oz white chocolate finely chopped
3/4 cup + 2 tablespoons heavy whipping cream
1 tsp vanilla extract

Raspberry compote:
2 cups raspberries fresh or frozen
2 tbsp sugar
1 tbso lemon juice
2 tbsp water

How - To:
1. Preheat the oven to 350ºF
2. Whisk the egg whites with the salt until they're holding firm peaks but are not stiff. Gently add in the sugar, still beating, until you've got a bowl full of perfect meringue. Add the cornstarch, a few drops of vanilla, vinegar, and lemon juice on top and fold in to combine.
3. Draw circles of approx 4 inch circles on parchment-lined sheets.
4. Spoon the meringue into circles, and spread and smooth to fill. Use the back of the spoon to make an indentation in the centre to hold the cream and raspberry.
5. Put into the oven, turn it down to 300ºF, and bake for 30 minutes. Turn the oven off and leave them in for another 30 minutes, then take out of the oven to cool. Transfer them, on their baking parchment, to wire racks.
6. White chocolate whipped cream: Combine chopped white chocolate and 2 tablespoons whipping cream in small metal bowl. Set over small saucepan of simmering water and stir until white chocolate melts and mixture is smooth. Remove bowl from over water. Cool white chocolate mixture 10 minutes. Beat remaining 1/2 cup chilled whipping cream in medium bowl until soft peaks form. Whisk in white chocolate mixture.
7. Raspberry compote: Add the raspberries, sugar, lemon juice and water to a pot, stir and bring to the boil. Allow it to boil for about 5 minutes, stirring often. Reduce the heat to low and let it simmer and bubble for 10 minutes. It will thicken further as it cools.

And now it's just a matter of assembly! Get creative as you like, but general rule is: pavlova, then cream, then fruit. Serve and enjoy!

Mango Almond Mimosas

Whether you're still planning a holiday brunch or need a fun way to ring in the New Year tonight - today's post has got your covered!

Our Mango Almond Mimosas is a delicious twist on a classic - and when dusted with a gold sprinkly rim, they are oh so festive!!

Ingredients:
8 oz amaretto liqueur
2 cups mango juice
1 bottle champagne or prosecco of choice

For rim:
Honey
Small gold sprinkles
Gold straws (optional)

How-to:
Rim 8 champagne flutes with your honey and gold sprinkles. Add 1oz of amaretto to tthe flutes, add about 1/4 cup of mango juice to each, and top with your bubbly!

Smoked Salmon Blinis with Creamy Dill Sauce

In the Centner house, a brunch spread is not complete without some smoked salmon!

Whether you create a build your own toast station or go with something a bit more refined like these Smoked Salmon Blinis with Creamy Dill Sauce, we've yet to meet a group of guests who don't enjoy this Scandinavian classic!

Ingredients:

Packet of smoked salmon
1 cup of self-raising flour
1 large egg
1 tbsp olive oil
1 cup of 2% milk
unsalted butter
1 cup sour cream
Fresh dill, chopped
1 tbsp lemon juice
Salt & pepper to taste
Micro greens to garnish

How-To:

Blinis:
1. Combine flour and a pinch of salt in a large mixing bowl. Beat egg and add oil into the flour. Gradually whisk in the milk until you’ve got smooth batter.

2. Heat large non-stick frying pan on a medium and add 1 small tab of butter.

3. Once hot and the butter’s melted, add tablespoons of batter to the pan to make your blinis. Cook for 1 minute on each side, flipping over when they turn golden on the bottom and get little bubbles on top. Just like making baby pancakes!

4. Transfer the cooked blinis to a plate, and continue with the remaining batter until it’s all used up.

Sauce:
In a small bowl, combine sour cream, lemon juice, dill, salt, & pepper.

Now is just a matter of building your canapés! Start with a dollop on sauce onto a blini, add a piece of smoked salmon, and garnish as desired!

And voila, a picture perfect creation that required a lot less effort than appears (our favourite kind 😉)

Banana Bread French Toast

While we normally wouldn't serve dessert with breakfast, you've got to have a bit of sweet to balance out the savoury in a brunch bar!

Going for a spin on a classic, we're sharing our famous Banana Bread French Toast recipe! So easy, and beyond delicious!!

Ingredients (for 4-5):
3 eggs
1 cup milk of choice
1 dash salt
1/2 teaspoon cinnamon
2 teaspoons honey, optional
1 teaspoon vanilla extract
2 tablespoons butter
1 loaf banana bread
1 tablespoon confectioners' sugar for dusting
Berries or fruit of choice

How-To:
1. In a shallow bowl or container, whisk together the eggs, milk, honey, cinnamon, and salt with a fork until well combined. Set aside.

2. Melt butter in a large skillet over medium heat. Slice banana bread into 4-5 thick slices. Dip each slice into the egg mixture, then place in the hot pan. Cook on each side until golden brown. Dust with confectioners' sugar just before serving, if desired.

3. Serve immediately with maple syrup and sliced berries!

Be sure to save this one down - good fora quick delicious breaky in a pinch!

Mini Garlic Parmesan Hashbrown Cups

Brunch really isn't complete without some form of hashbrown - and these might be our new favourite form!!

These Mini Garlic Parmesan Hashbrown Cups are crispy on the outside, soft on the inside, and best of all - bite sized!!

Ingredients:

  • 3 large russet potatoes

  • 1/2 cup sliced green onions

  • 1 tbsp unsalted butter

  • 2 cloves garlic, grated

  • 1/2 cup grated parmesan cheese

  • 1 teaspoon sea salt

  • 1/2 teaspoon cracked pepper

  • 2 tablespoons olive oil

How-To:

  1. Preheat oven to 400 degrees.

  2. Peel potatoes, and shred. Lay out on paper towel and pat to remove some of the moister.

  3. In a large bowl, mix the potatoes, green onions, parmesan cheese, garlic, sea salt, cracked pepper, and olive oil till well combined.

  4. Grease muffin tray with butter. 5. Scoop mixture into muffin tray, evenly distributing all the hash browns each cup, and press down just a little bit.

  5. Sprinkle a little bit of parmesan on top of each. 7. Bake for 30-40 minutes (until crispy).

Serve immediately and enjoy!
