We absolutely love a cucumber salad as a starter and couldn't resist putting a spooky twist on the classic concept!
The Slithering Salad is a simple salad with a simple soy dressing and some garlic chili sauce for heat. And the fun part is, instead of slicing the cucumbers, you can spiralize them to create this super festive salad with a lot of dramatic plating, perfect for your dinner!
Ingredients (for one snake)
1 large cucumber
1 small cucumber
Spicy Dressing (see below)
Peppercorns (for snake eyes)
Spicy Dressing
2½ tbsp rice wine vinegar
2 tbsp garlic chilli sauce
1 tbsp soy sauce
1 tbsp toasted sesame oil
1 tbsp honey
1 tsp fresh ginger, finely grated
Instructions
- Create a spicy dressing by mixing all the dressing ingredients in a small bowl.
To spiralize the cucumbers:
- Use straight cucumbers for best results.
- Designate one end of the large cucumber as the snake head, preferably one with a piece of the vine attached. The smaller cucumber makes up the tail.
- Thread a bamboo skewer through the center of the cucumber lengthwise, leaving some exposed for later removal.
- Cut the cucumber in a continuous spiral around the skewer.
- Stop spiralizing about 2 inches from the end of the cucumber, the snake's head.
- Carefully remove the skewer to release the snake coils.
- Repeat the process with the other cucumber, spiralling the cuts down.
- For snake eyes, use the end of a skewer to poke eye holes and insert peppercorns into the holes.
- Arrange the snake sections on a serving platter, lining them up end-to-end.
-Drizzle with the spicy dressing and serve!
