Okay, we've officially found the perfect snack as you greet your trick-or-treaters this evening - Ghost Sugar Cookies! 👻
Ingredients
1 cup sugar
1 cup unsalted butter two sticks or 16 tbsp
2 eggs
1 teaspoon baking powder
½ teaspoon salt
3 tablespoons pure vanilla extract
3 cups unbleached flour
How-To:
- Using a hand or stand mixer, beat together your sugar and butter until combined.
- Add your eggs and combine. Add remaining ingredients and stir until fully combined. It should stick to the paddle of your mixer attachment when it’s ready and not stick to the bowl.
- Divide into two parts and roll out your dough to about 1/4 inch. We use two cookie sheets for this amount. Put in the fridge for a minimum of 30 minutes.
- Once the dough has chilled, cut out your shapes and preheat your oven to 350 degrees. *The great thing about ghosts is you don't need a cookie cutter! Have some fun and get creative with their shapes!
- Take the first cookie sheet full of shapes and place it in the freezer for 7-10 minutes. This minimizes spread.
- Bake for 9-12 minutes. Allow the cookies to cool on the cookie sheet, the cookies will finish baking directly on the sheet.
Frosting:
Simply mix 2% milk and confectioners sugar in a bowl until you have a thick, peanut butter consistency icing. If it's thick it won't run off the cookies! I use either an icing knife or the back of a spoon in a circular motion to spread the icing. For the ghost eyes, simply portion out a small amount of your icing and add black gel food colouring.
And voila! You now have a plate of BOOtifully decorated cookies fit for your celebration!
